Marilyn made apricot balls the other day. Well, that is what I would call them, she said they were truffles. (What do I know?) She used her friend, Candyse's recipe.
The little balls are very easy to make (unlike the Oreo Truffles she made one time). The recipe is simple:
1–1/2 cup dried fruit (any kind)
1/2 cup almond meal
I Tbsp. honey or agave syrup
1/2 tsp. ginger.
Mix about 45 seconds in a food processor, divide into small balls and roll them in almond meal, cocoa or powdered sugar.
M & A thought they were delicious.
One of the apricot balls fell to the floor and I ate it. Apricot are not my thing!
